The Craftsmanship Behind Handmade Soba

The soba noodles at Oh-SOBAR are crafted with close attention to detail, ensuring that every ingredient contributes to their distinctive flavor and character. The dough combines buckwheat flour with ingredients such as konjac, akamoku, and chōmeisō (longevity grass), giving the noodles their unique aromas, textures, and colors.

One of these ingredients, akamoku, is a type of seaweed traditionally used in Japanese dishes such as miso soup and vinegared salads. Its distinctive texture and subtle flavor bring another dimension to the soba.

Seasonal Japanese Cuisine and Kappō Courses

At Japanese soba restaurant Oh-SOBAR, a Kappō course meal starts with appetizers meant to enhance the natural umami in each ingredient, like chawanmushi with Awaji onions and broad beans, and abalone that’s steamed and served over seaweed with soy dressing.
Next, seasonal dishes are beautifully prepared: grilled hamo, fresh sashimi, and a variety of tempura, crispy and hot.
Every course expresses its true flavor in that season and presents the taste of refined traditional Japanese food.

A Contemporary Japanese Interior with Ocean Views

Oh-SOBAR’s contemporary approach to Japanese soba is echoed in the building itself, designed by the famous designer Yasumichi Morita. Enter a space that incorporates interior finishes in natural wood with the scenic beauty of Awaji Island’s coastline.
Large windows open onto serene views of the Harima Sea and the colors of the sky, which create a soothing and inviting ambiance.
Consequently, this warm, modern design invites guests to relax, dine, and connect with nature.
Moreover, every visit is an opportunity to taste fine dining and enjoy memorable Japanese dining experiences by the sea.
